Pesto Palooza

or...what to do with all of those herbs!

 

3 GREAT PESTOS

 

BASIC BASIL

4 peeled garlic cloves
1 cup toasted pine nuts
4 cups fresh basil leaves
1 tbsp fresh lemon juice
1/2 cup olive oil
salt & pepper to taste

 

 

 

 

CILANTRO CASHEW

  *shown with kelp noodles & grilled salmon

4 peeled garlic cloves
1 tbsp grated fresh ginger
1 cup cashews
3 cups cilantro leaves
juice of 1 lime
1/2 cup olive oil

 

 ALMOND MINT

4 peeled garlic cloves
zest and juice of 1 lemon
3 cups fresh mint leaves
1/2 cup raw almonds
1/2 cup olive oil
1 tsp freshly ground black pepper

*great with grilled eggplant or lamb
